Vegan Chickpea Tofu Burgers with Bluecheese Topping 두부버거

Simple, light, colourful, healthy, tasty summer meals with simple ingredients are awesome. But it’s even better when you don’t have to run down to the shops to buy stuff. I had everything I need in the fridge or pantry and maybe you will too~☆

Ingredients
(makes 4 patties)

● 1 can of chickpeas (approx 1.5 cups), drained
● 120g firm Tofu
● 1 Tbsp Tahini
● 3 Tbsp Almond butter
● 1 Tbsp olive oil
● 1/4 cup Almond or Hazlenut meal
● 1/2 cup diced Mushrooms
● Fresh Oregano and Thyme
● salt and peper
● Garnish: slices Tomatoes, Avocado, Bluecheese etc.
● Oil for the pan

Preparation

1. Wash and chop the mushrooms into small cubes. Put aside.

2. Drain and rinse Chickpeas and pop them out of their transparent shell. I don’t like them so I remove them one by one no matter how long if takes.

3. Put them into a food processor together with the tofu, tahini, almond butter, olive oil, almond meal, herbs, salt and freshly ground pepper. Now pulse everything into a big chunky thick blob. I prefer to keep some chunkyness in the burger because first of all, it looks better and second, the texture is better. (you can add different spices like curry, paprika, kardamom or others if you wish)

4. Scrape it out into a bowl and give everything a good mix with a spoon. Then add the mushrooms and fold them into the patty batter.

5. Heat some oil in a large non stick pan on medium.

6. Using your hands, scoop out 1/4 of the patty batter and form a chubby patty in your palm. It should stick together quite well but if you get the feeling that it is having trouble being sticky or is starting to crumble, just add some water and you’ll be fine.

7. Fry in the heated pan for around 3~4 minutes on each side. You might have to add a dollop of oil halfway through.

Garnish the patties with tomatoes, avo, bluecheese or anything else you have lying around in the fridge! It was a delicious meal and my boyfriend deeply regretted having bought his chicken burgers. HAH! I think that says it all. And he LOVES meat.
